Organic Chocolate Ice Cream Recipe

Ice Cream is always a fun treat. As long as it’s enjoyed in moderation and s made with as many organic ingredients as possible. Remember the fewer toxins you put in your body, the less your body has to get rid of them.

Here’s a recipe below. 

Amount Ingredients
2 cups organic cream or colostrum
1 cup organic milk
To taste organic agave (sweetener)
To taste organic vanilla
2 eggs organic egg yolks (optional)
2/3 cup unsweetened cocoa or cacao powder
Optional Cacao nibs
1/2 tsp Cinnamon


Put ingredients in a bowl; whisk to mix, pour into ice cream maker, turn on for 25 minutes (to taste), and you’re done.

Chipotle Maple Sweet Potatoe Burgers [VEGAN]

Makes 4 yummy veggie burgers

Ingredients:

  • 1 tablespoon virgin olive oil 
  • 1 medium sweet potatoes (about 1 pound), diced small
  • 1/2 medium yellow onion, diced small
  • 1/2 large garlic clove, minced
  • 1 cup quick cooking oats, dry
  • 1/8 cup pecans, minced
  • 1 tablespoons nutritional yeast
  • 1 tablespoons flax meal
  • 1 tablespoons quinoa
  • 1 cup of baby Bella mushrooms, quartered
  • dash of kosher salt or sea salt (½ teaspoon)
  • 1 teaspoon of cumin
  • 1 teaspoon of allspice
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon chipotle chili powder
  • 1/4 teaspoon ground black pepper
  • 5 tablespoons maple syrup or Mike’s Hot Honey
    • If you choose the honey, add 1/4 teaspoon of cinnamon
  • 4 hamburger buns

STEPS:

STEP1: In a medium saucepan, add the diced sweet potatoes and cover with water. Add a dash of salt and bring to a boil over high heat. Then, reduce to low and simmer for about 15 minutes until very tender. Drain and set aside for later.

STEP2:

In a medium frying pan, heat the olive oil over medium-low. Add the onion and garlic and sauté for about 10 minutes, until the onions are brown.

STEP 3: 

In a large bowl, add the oats, add the quinoa, through spices and pepper. Whisk well to combine. Add the boiled sweet potatoes and the onion mixture as well as the maple syrup. Using a wooden spoon, mash the sweet potatoes and mix everything together very well.

STEP 4:

Preheat oven to 400°F and line a baking sheet with parchment paper. Coat your hands with a non-stick cooking spray and form the burger mix into eight large patties. Arrange on the baking sheet in a single layer.

STEP 5:

Bake at 400 F for about 45 minutes, turning the patties over halfway through. Once done, remove from oven and allow to rest for about 5-10 minutes.

This will set the patties.

Serve hot, with barbecue sauce. Add avocado, arugula to buns for serving

Omg, I tried this and loved this. There are so many different combinations of cheese you can swap out. 

Green Goddess Grilled Cheese Sandwich

Ingredients

2 slices bread (try to find one filled with lots of different whole grains and seeds)
2-3 tablespoons Green Herb Pesto or see (Recipe)
2 slices mild white melty cheese like mozzarella
handful fresh baby spinach
¼ avocado, sliced
2 tablespoons goat cheese, crumbled
olive oil (and butter optional )

Directions

Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (2 tablespoons total, but if you’re sensitive, go light, the pesto is STRONG).

On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with the second slice of bread. Press together gently.

Heat 1 tablespoon olive oil in a frying pan over medium-low heat. (If you want to use butter, add it to the oil and let it melt). Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until the second side is golden brown.

Green Goddess Herb Pesto

Ingredients

1 clove garlic
1 (or 2 optional) anchovy fillet (in oil) or 

1/4 tsp of anchovy paste
½ small shallot, chopped (about 1 tablespoon)
1 teaspoon lemon juice
handful chopped fresh Italian parsley
handful chopped kale
2-3 tablespoons chopped fresh tarragon
1 tablespoon chopped chives
¼ cup olive oil or avocado oil
sea salt and ground pepper to taste

Directions

Pulse garlic, anchovy, and shallot in food processor until chopped. With the food processor running, add lemon juice, parsley, kale, tarragon and chives. 

Very slowly drizzle in oil until kale and herbs get sufficiently chopped and everything is the consistency of a pesto. You may need more or less of the oil depending on how big a “handful” of herbs is to you. You can also turn off the food processor and push herbs down the side of the bowl with a spatula every once in a while.

Season to taste with salt and pepper (You probably won’t need too much salt if you used anchovies.)

Measurements

– 1-inch thick piece fresh horseradish root
– 2 cloves garlic
– 1/2 cup chopped onion
– 2 inches fresh ginger root
– 2 inches fresh turmeric root
– 1 cup apple cider vinegar
– 1 tbsp. raw unpasturized honey

Method:

1. Grate or juice the horseradish, garlic, onion, ginger and turmeric.
2. Fill a litre glass jar with 1 cup apple cider vinegar, and fill the rest with filtered water. Stir in honey.
3. Add in the grated or juiced ingredients from step 1.
4. Shake the closed jar to mix everything together and let it sit in a dark, dry place for 2 weeks. Shake it once per day.
5. After 2 weeks, strain the ingredients if you grated them. If you juiced them, skip this step. Store the finished product in the fridge.

Drink 1-2 ounces 2-3 times per day to maintain good health. If you are not feeling well, drink 1-2 ounces 5-6 times per day. This remedy can help you feel better in under 24 hours.

Brussels Sprouts and Kale Salad       

 

Ingredients:

 

For dressing:

2 Tbs fresh lemon juice

1 Tbs dijon mustard

1 tsp shallot, finely minced

1 small clove garlic, finely minced

1/8 tsp kosher salt

Pinch black pepper

1/4 c extra virgin olive oil

For salad:

2-3 c thinly sliced kale (approx 1/2 a bunch)

1 lb brussels sprouts, finely shredded using a mandolin or sharp knife

3-4 slices turkey bacon, baked and chopped

1/4 c roasted almonds, chopped*

1/2 c Pecorino cheese, finely grated

 

Directions:

 

Combine all dressing ingredients in a small bowl and mix. (Alternatively, I sometimes throw everything in a mini food processor and let it do the chopping.) Add in olive oil, whisking (or processing) until combined.

 

Mix sliced kale and shaved brussels sprouts in a large bowl. Throw in bacon, almonds, and cheese. Pour dressing over the top and toss salad until all ingredients are distributed throughout.

Cilantro lime crab salad recipe

Makes 2 servings; can be doubled

 

Ingredients

  • 1/3 cup finely chopped red onion
  • 3 tablespoons mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 3 teaspoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon grated lime peel
  • 8 ounces crabmeat
  • 1 ripe large avocado, halved, pitted, peeled Lime wedges

 

Preparation

 

Stir red onion, mayonnaise, cilantro, 2 teaspoons lime juice, cumin and lime peel in medium bowl to blend. Mix in crabmeat. Season salad with salt and pepper. Brush avocado halves with remaining 1 teaspoon lime juice to prevent discoloration. Arrange avocado halves, cut side up, on plates. Mound crab salad ­­­­­­­­­­­
